Something you seldom see in other Japanese restaurants are Japanese flower
arrangements on the tables. Yoshi, a long time student of
Ikebana (the Art of
Japanese Flower Arrangement), likes to exhibit his creations for the guests to
enjoy. Each
Ikenobou-style arrangement, like the dishes he prepares in the
kitchen, tries to exhibit "balance & harmony." Coming to work early to personally
create flower arrangements for each table is one of Yoshi's greatest pleasures. If
you see an arrangement that you especially like, please mention it to one of your
servers. He gets as much joy from the praise for his flower arrangements as he
receives for his cooking!
Each leaf and each stem is as
important as the flowers...
Attaining a balance creates
harmony in the arrangement;
just like in cooking.
